Fruit Smoothie
Serves 12
Large pitcher or punch bowl
2 cups raspberry puree or ¾ cup raspberry syrup
6 cups pineapple juice
2 cups orange juice
3 tablespoons lemon juice
3 cups light rum
4 cups ice cubes
Combine raspberry puree and other liquid ingredients in pitcher or bowl and mix well. Add ice cubes and serve immediately. To make the raspberry puree, simply puree 4 cups of fresh or frozen raspberries until smooth. Strain the puree into a bowl through a fine-mesh sieve to remove the seeds. Refrigerate until chilled. The puree will keep, covered and refrigerated, for up to 2 days.
This sweet concoction is a proven crowd-pleaser. Perfect for a reception morning or night, its vibrant coloring and small flecks of fruit pulp running through make it equally as pleasing to the eye. The velvety texture and intense fruitiness will certainly give your guests the courage to get up and groove! For a non-alcoholic Smoothie, substitute an additional 3 cups pineapple juice for the rum.
